Boulder Eats: Shine Restaurant & Gathering Place

Jessica, Jill, and Jennifer Emich (aka the triplets of the late-Trilogy Wine Bar and Lounge) are back in Boulder after a three year hiatus. Their newest venture, Shine Restaurant & Gathering Place (set in the short-lived Los Oasis Latin Grill & Cerveceria location), is a holistic, community-centered approach to dining.

In a departure from the trendy, wine-driven Trilogy, the versatile sisters’ new menu focuses on “nutritionally inspired American comfort food” as well as house-brewed beers, a small selection of sustainably farmed wines, and an array of hand-crafted potions and elixirs designed to “open the body, mind, and heart to promote well being and bliss."

The menu contains both hits and misses. Salads are overdressed and soups are much too thick, but the juicy Leistekow grass-fed beef burger (pictured) is a must-order item. The patty has just the right smoke, and it arrives topped with lettuce, tomato, cheddar, caramelized onion, and a creamy avocado aïoli. Also memorable: the super tender chicken sandwich.
